Diplome Pre-slicing knife 23cm from Zwilling. A pre-cutting knife with FC61 steel (61 HRC) ice-hardened stainless steel, CRYODUR®. The knife is a little longer, which makes it an excellent filleting knife and works both for filleting/boning fish, trimming and cutting thin slices of meat, etc. Comparable to the typical Japanese knives in terms of its sharpness and like these it has an extra sharp Honbazuke blade. The sharpening angle of the knife is 19° and has a well-balanced ergonomic synthetic handle. Made in Seki, Japan.
