A-73 is the culmination of Ryda Knives' craftsmanship and technical development - our most advanced and high-quality collection to date. Each knife is carefully engineered for its specific application, with precise balancing, thoughtful geometry and uncompromising material selection.
The paring knife is balanced with the center of gravity slightly further back to provide stability and control for precise, long cuts. The chef's knife has a higher balance point that promotes a natural, high pinch grip - a technique preferred by professional chefs for maximum control and efficiency.

The core of each blade is made from our proprietary ST650 powder steel – engineered to deliver superior sharpness, durability and edge stability. The core steel is encased in 73 layers of high-alloy Damascus steel, providing both structural strength and a unique visual expression.
Through our advanced grinding process, we achieve over 840 in the CATRA test – clear proof of exceptional cutting performance and long-lasting edge sharpness.
With a hardness of 60–63 HRC, the A-73 series combines impressive wear resistance with good maintainability – built to perform year after year.
French olive wood – natural elegance
The handles are made from carefully selected, figured French olive wood. The dense wood feels silky smooth in the hand and develops a deeper, richer patina over time.
The ergonomic design provides a stable and comfortable grip even during long work sessions – where comfort is as crucial as sharpness.
